Sweet Potato Breakfast Skillet

Breakfast in our house is very important.  My daughter is in 6th Grade and always needs something to keep her full until lunch at noon, especially during tests.  My fiance needs something to keep him full and not cause crazy fluctuations in blood sugars, and I need something to give me energy for my physical job in a warehouse.  Protein is helpful with this endeavor, so what do we eat?

Sweet potatoes are a great starch to start the day.  Lots of vitamin A, great sweet taste for those who enjoy a sweet breakfast, but not the sugar crash like with white potatoes. Savory sausage will add enough protein to keep everyone full until lunchtime.

My family will devour this breakfast every time I prepare it!

Sweet Potato Breakfast Skillet

2-3 medium sized sweet potatoes
1 lb. ground sausage (I like breakfast or Italian sausage)
1 medium onion
2-3 tsp. salt
2-3 cloves fresh garlic (finely chopped)
2 Tbsp. Basil
1 Tbsp. Oregano
1 tsp. Rosemary
1 tsp. Thyme
1 Tbsp. olive oil
Heat olive oil in a skillet.  Chop onion into bite sized pieces.  Saute onion in the olive oil with fresh chopped garlic.  Next, brown your sausage with the onions.  Once fully cooked, add your spices.  (Now, I will be honest, I don’t measure my spices.  I just add what smells good!  The measurements are only an approximation.  Feel free to add more or less depending on your tastes.)

Cut your sweet potatoes into bite sized pieces and add them with the sausage and onion.  saute in a covered skillet over medium for approximately 20 minutes, stirring occasionally.  Once your sweet potatoes are soft when poked with a fork, it is ready!

Yields approximately 6 servings

Variations:  Fill a warmed corn tortilla with this filling and top with salsa for a spicy meal easy for on the go!
